How this bakery runs
Milled in state
Our flour is stone-milled in Wisconsin and delivered weekly, so the wheat in a Tuesday loaf was grain a few days before.
40-hour dough
Every sourdough ferments cold for 40 hours before it meets the hearth, which is where the open crumb and blistered crust come from.
Baked to the day
We bake for the day, not for a freezer. What does not sell by close goes to a local food pantry, never back on the shelf.
Reserve by name
Order a loaf, a pastry box, or a cake with 48 hours notice and we set it aside under your name for pickup.
